If you want a dessert that truly impresses, this authentic French soufflé is a perfect choice. Famous for its delicate rise and cloud-like texture, it delivers both elegance and rich flavor in every spoonful. Despite its refined appearance, it’s surprisingly achievable at home with simple ingredients and careful technique. Whether you’re cooking for guests or treating yourself, this soufflé brings a touch of French sophistication to your kitchen.
Ingredients
Soufflé Base
4 large eggs (separated)
1/2 cup whole milk
2 tbsp unsalted butter (+ extra for greasing)
2 tbsp all-purpose flour
1/2 tsp Dijon mustard
1/2 cup grated Gruyère cheese
1/4 cup grated Parmigiano-Reggiano
1/2 tsp fine salt
1/4 tsp white pepper
1/4 tsp nutmeg (freshly grated)
1/2 tsp lemon zest
1/2 tsp chopped chives
1/2 tsp fresh thyme
Egg Whites Stabilizer
1/4 tsp cream of tartar
Ramekin Coating
1 tbsp finely grated Parmigiano-Reggiano
Instructions
1. Prepare the Oven & Ramekins
Heat oven to 400°F (200°C) and place the rack in the lower section.
Grease four 8-ounce ramekins thoroughly with butter. Dust each with grated Parmigiano-Reggiano, rotate to coat evenly, then shake out excess.
2. Separate Eggs
Carefully separate yolks and whites into two clean bowls. Ensure no yolk mixes with the whites for best whipping results.
3. Make the Base Sauce
Melt butter in a saucepan over medium heat. Stir in flour and cook for about 1 minute until bubbling gently.
Slowly whisk in milk and cook until thickened and smooth (about 2 minutes).
Remove from heat and mix in salt, mustard, pepper, nutmeg, lemon zest, chives, and thyme.
Add egg yolks one at a time, mixing well. Stir in both cheeses until melted and smooth. Allow to cool slightly.
4. Whip Egg Whites
Add cream of tartar to egg whites. Beat with an electric mixer until soft peaks form, then continue until stiff, glossy peaks appear.
5. Fold Mixtures Together
Gently fold one-third of the egg whites into the base to lighten it. Then carefully fold in the rest in two additions, preserving airiness.
6. Fill Ramekins
Spoon mixture evenly into ramekins, filling to the top. Smooth the surface and run a finger around the inside rim to help even rising.
7. Bake
Place ramekins on a baking tray. Lower oven temperature to 375°F (190°C) immediately after placing them inside.
Bake for 18–22 minutes until puffed, golden, and slightly wobbly in the center.
8. Serve Immediately
Soufflés deflate quickly, so serve right away for the best texture and presentation.
Expert Tips
Make sure ramekins are well coated so the soufflé climbs properly
Don’t skip the egg white whipping stage—it creates the lift
Fold gently to avoid deflating air bubbles
Serve straight from the oven for maximum height
Common Variations
Add spinach or mushrooms for a savory twist
Use cheddar instead of Gruyère for a stronger flavor
Add herbs like basil or dill for freshness
Try a sweet version by replacing cheese with chocolate or citrus
Storage Advice
Soufflés are best enjoyed fresh. They do not store well after baking because they lose volume quickly. However, the base mixture can be prepared a few hours ahead and refrigerated before folding in egg whites.
Serving Ideas
Pair this soufflé with:
Light green salad
Roasted vegetables
Sparkling wine or chilled herbal tea
Fruit compote for contrast
Final Thoughts
A French soufflé may look delicate and complex, but with patience and proper technique, it becomes a rewarding dish to master. The combination of airy texture and rich, savory flavor makes it unforgettable.
Once you get comfortable with the method, it quickly becomes a show-stopping recipe you’ll return to again and again.

Best Pickup Trucks 2025 UK: Group Test & Buying Guide
Modern pickup trucks have evolved into versatile all-rounders, capable of conquering tough off-road terrain, handling workday payloads, and catering to family shopping trips alike. To identify the top models in the UK market and those best avoided, the Parkers team conducted an exhaustive group test—evaluating on-road and off-road performance, towing capability (including hauling a trailer with a racing car), and everyday practicality. We focused exclusively on double-cab variants, which dominate UK sales due to their five-seat capacity and spacious load bays, while excluding models with payloads under 1,000kg (such as the Ineos Grenadier Quartermaster) and basic utilitarian trims. All tested vehicles feature four-wheel drive, smartphone-compatible infotainment systems, and modern comforts like heated seats and wireless charging, reflecting the demands of today’s buyers.

The Secrets Behind Why Wild Rodents Love Running On Wheels Just Like Your Pet Hamster
Every person with a pet hamster recognizes that distinct noise. It is the tiny and persistent rattle of the exercise wheel. This sound usually begins around two o'clock in the morning. You watch your adorable furry friend sprint toward absolutely nowhere. You might start to wonder about this behavior. Is the little creature acting out due to confinement or boredom? For many decades, experts believed exactly that. They thought it was a mental issue caused by captivity. It seemed like the animal version of doing exercises in a jail cell. However, a researcher named Johanna Meijer changed this view in the year 2014. She managed a fascinating study with surprising results. Wild mice discovered an exercise wheel in nature. They climbed onto it and started running. Some of them ran for eighteen minutes without stopping. So it is not just boredom or a mental problem. Wild rodents surely have more important chores to finish. Dr. Theodore Garland Jr. is a biology specialist. He works at a well-known university. He has investigated this mystery for over three decades. There is still a lot of debate about this topic. Experts wonder what wheel running truly means to a living creature. They want to know what the animal is trying to achieve.

An Overview of Beetles: Nature’s Diverse Insects
Beetles are a remarkably varied group of insects found in nearly every corner of the globe. With over 300,000 species worldwide—and 12,000 in the United States alone—these creatures have adapted to live on land and in freshwater. Most beetles live for about one year and are characterized by having two sets of wings. Because they possess limited vision, they rely on sound, vibrations, or chemical signals called pheromones to communicate with one another.
